I ordered the black oodle ramen for 850 yen and the white egg for 450 yen. The ramen was beautifully presented, with a glossy layer of oil on top and a rich, flavorful broth that left a lasting impression. The pork was particularly delicious and tender. I opted for the recommended niboshi broth and seasoned egg. The noodles are medium-thick, cooked to a firm texture, and the soup has a bonito-flavored soy sauce base. While it's quite tasty, I do think the prices are on the higher side for what you get (the seasoned egg costs 160 yen). The salt level is just right, making it easy to drink the entire bowl. The noodles are the ideal low-moisture type, perfectly chewy, as you'd expect with niboshi ramen! The three types of chashu are lightly seasoned and thinly sliced, carefully crafted to complement the niboshi soup without overshadowing it. The menu seems focused solely on niboshi, reflecting a serious commitment to their craft, which is clearly evident in the taste! However, I couldn't help but notice that the staff were quite chatty with each other, which seemed a bit wasteful given how delicious the ramen is.
