Peppers - Las Cruces

We really enjoyed the vegan fajitas and vegan enchiladas at this restaurant. Both dishes were clearly marked as vegan on the menu. The enchiladas were stuffed with zucchini, tofu, poblano peppers, and corn, all smothered in a delicious salsa verde.
