The owners of this restaurant truly understand what vegan means, and they offer a few delicious dishes like sansai soba and sansai udon. The broth is warm and refreshing, made with mountain vegetables such as mushrooms and garlic—it's really tasty! They also serve edamame and nozawana, which cater to those with picky palates. In yudanaka we found it pretty hard to get everything really vegetarian/vegan. the owner of a pizza place then yariya has a bit further on the road in shibu onsen. it was a small place, scratched with colorful figures. they even had a handwritten English translation of the menu with 2 vegans and 1 vegetarian oriented on it. we had vegan handmade soba with regional wild vegetables and enoki mushrooms and a nicer. both were delicious and cheap. we were blown away from the friendly service, the good quality of eating and that it was also a non-smoking place. if they are in the opposite, they should try it out!

I enjoyed a fantastic vegan meal accompanied by homemade soba noodles and a refreshing salad, all served in a traditional setting adorned with interesting decorations. To top it off, the server presented a plate of freshly cut fruit at the end of the meal, which was both delightful and fresh. I can't recommend this place highly enough!
Located on the main street of Shibu Onsen, this restaurant is somewhat discreet, identifiable only by its connection to the Koishiya Ryokan and the public onsen nearby. The interior is charmingly cluttered with small trinkets, and the elderly couple who run the place are friendly, even if their English is limited. They have a compact menu that highlights vegetarian and vegan options, including udon or soba salad, and they also serve edamame as a starter. I ordered the vegan soup, but was instead served salad, so I assume the soup is plant-based as well. The prices are very reasonable, and to top off the meal, they serve delicious sliced apples for dessert.
