You have to try Azor! It is a Portuguese gin that rests 6 months in a port barrel. The bartender is the owner, very friendly, creative and really nice The building is an old palace belonging to a family.

One of the coolest bars I know is definitely the best you will find in Évora. Only 15m away you will get large artisan ice cream at Zoka

I have no idea how it is during the tourist season, but on a rainy night in November — if there is not much open — Cafe Estrella d’Ouro was perfect. Chill, kind, generous.

Cool bar in the Center of Évora. However, 14€ for a Gin Tonic seems totally off. Even in the hippest bars in Lisbon I never paid so much for a Gin Tonic!!!
